Cider & Perry Production – A Foundation is a week-long course providing students with expert knowledge of cider and perry principles and practices. This course is based off of the popular series taught by cider expert Peter Mitchell. The curriculum includes information regarding cider culture, production, and business. Students of this course will participate in hands-on sensory demonstrations, laboratory exercises, and blending trials.

The five-day course involves hands-on practical lab work, lectures, workshops, and cider tastings that include:

  • A detailed step-by-step guide to cider and perry production
  • An understanding of the chemistry and microbiology behind cider and perry
  • Practical training in the key skills of cider production and methods of laboratory analysis
  • Introduction to sensory analysis of cider and perry
  • Information on the business of cider, taught by Marcus Robert of Tieton Cider Works
  • Optional CINA Foundation Certificate exam

The Cider Apple Orcharding Workshop will teach the fundamentals of growing cider apples in the Pacific Northwest. Hard cider production and sales have dramatically increased over the last decade, and cidermakers are interested in cider-specific apple cultivars now more than ever. However, these apples are oftentimes in short supply and difficult to obtain. During this one-day workshop, students will receive knowledge from orcharding experts and participate in hands-on practices.
